CHICKEN, ARTICHOKE, MUSHROOM, AND GARLIC DISH WITH SPAGHETTI SQUASH

I had this meal out at Ruby Tuesday’s with my husband and loved it so much I had to re-create it in a healthy way!

What you will need:

  • Spaghetti Squash – I used two small organic squash which made enough for my husband, myself, and leftovers for lunch the next day
  • Mushrooms – I like fresh/organic- use whichever type you prefer
  • Artichokes- I buy canned. You can get a great deal on artichoke hearts at Costco in large glass jars or you can buy canned artichoke hearts. I will post the brand I use.
  • Garlic – you can use garlic powder or minced garlic
  • Broccolini – This was a nice side veggies (optional)
  • Tzatziki sauce – I used this in the squash as a “sauce” (optional)
  • Sea Salt – Optional condiment

Directions:

If you dont have pre-cooked chicken I would suggest keeping proteins like chicken in large pre-cooked batches to make your meals easier! I always order grilled chicken in bulk from IconMeals (coupon code – Mishkadawn10 for 10% off). If you do not have pre-cooked chicken you will need to bake or grill some.

Since spaghetti squash takes the longest to make I always start with cooking that first. I have posted how I make my squash in another recipe, I always make it the same way (less than 20 mins in the microwave) here is a link to that post – How I cook Spaghetti Squash.

While that is cooking, you want to start to sauté the mushrooms in a frying pan on high heat. I use coconut oil spray or a little bit of olive oil. Once they cook down you will want to add your artichokes (I cut mine into small pieces and add in along with the garlic and sea salt). Cook all together until all heated through.

Finish scraping the spaghetti squash from the squash shell. Place in a bowl or on a plate. I then mixed Tzatziki sauce into the noodles for extra flavor. Add re-heated chicken on top of spaghetti squash and then top with mushroom/artichoke mixture.

Steam broccolini or veggie of choice as side option. I always add sea salt to my steamed veggies. Enjoy!
