HEALTHY TURKEY PUMPKIN CHILI

Cooking is an art. I dont believe there is one recipe for anything.. Often times i just make things up dependent on my preference in taste. Last year I added a can of pumpkin to my normal healthy turkey chili recipe and it created a creamy/sweeter base that was absolutely delicious! A perfect fall chili for you to try if you are tired of your standard chili recipe:

Throw in CrockPot:

1 lb. 99% lean ground turkey

1 diced sweet onion

1-2 diced bell peppers of choice- I typically use orange and reds

1 can pumpkin puree

1 can organic kidney beans

1 can diced tomatoes with green chilies

1 can fire roasted stewed tomatoes

Then added pepper, chili powder, pink himalayan sea salt, red pepper flakes, onion and/or garlic powder,  saigon cinnamon, pumpkin pie spice, and some sweet leaf sugar substitute to make it sweet and spicy (If prefered- I dont measure any of this, so add to desired taste)

Set your crock pot on medium-high and put turkey on the bottom to make sure it cooks first. Add all other ingredients on top. Cook on this heat for about 2 hours. Turn to medium low and mix well until turkey has crumbled, cook another 1-2 hours until turkey is cooked through and has separated.

I typically serve this with toasted ezekiel bread and laughing cow cheese.

To speed up the process you can do the following:

Sauté one sweet onion in 1 tbs coconut oil with one diced red bell pepper, green bell pepper, and orange bell pepper. Add a tablespoon of crushed garlic and 1/2 a whole garlic clove. Then add one pound of lean ground turkey. When it was no longer pink, throw in crock pot with list of ingredients above and cook together for 2 hours until veggies are tender, mixing often.
